I came across a recipe for 2 ingredient ice cream by watching an episode of Gemma Stafford's Bigger Bolder Baking on YouTube. I'm always looking for simple recipes that don't require special equipment (or many bowls to wash) so this was perfect! AND I got to use all organic ingredients. Woot!
Ice cream ingredients (okay, there are actually 3 ingredients)
- 2 cups of heavy whipping cream
- 14 oz of sweetened condensed milk
- 2 teaspoons of vanilla extract
Equipment used
- Hand mixer
- Measuring spoons
- Large bowl to whip the heavy cream
- Smaller bowl for the sweetened condensed milk and vanilla
Step 1: Pour 14 oz of sweetened condensed milk into a bowl
Step 2: Add 2 teaspoons of vanilla extract to the sweetened condensed milk and mix
Step 3: In a separate large bowl, whip 2 cups heavy cream on medium speed
The heavy cream should be stiff - this took about 2 and a half minutes.
Step 4: Fold the whipped cream into the sweetened condensed milk. I added a few large spoonfuls, folded, then added more cream, and folded. I did this in about 3-4 batches.
Fold in the cream, don't stir!

Step 5: Place mixture into containers. I split up the mixture into 3 separate containers so that we could enjoy different mix-ins. I kept one batch plain. My husband chopped up dark chocolate for batch #2.
I added 3 crunched up chocolate sandwich cookies for batch #3. We placed a layer of plastic wrap on top of the ice cream before putting the lid on each container.
Step 6: Freeze for at least 6 hours or overnight. Here's a shot of the finished product (batch #3 with crushed cookies).
Step 7: Scoop and enjoy!
The ice cream was good - very rich but it was too sweet for me. Next time I plan to use half the amount of sweetened condensed milk - hopefully it'll be thinner and lighter. I feel if I let it melt it wouldn't be as liquidity as store-bought ice cream. It would be very thick. I kind of like my ice cream slightly melted. :o) It was definitely very good though and a fun way to enjoy ice cream! I'll make this again with some modifications.
